I've actually been pretty lucky in that most of the shows I watch tend to go the distance (i.e. get at least 4-7 seasons). Of recent cancellations, I have no complaints about most of them: The Unit desperately needed to be taken out back and shot. Cold Case had a good run, so did Numb3rs and (last season) Without A Trace. I am currently cursing the cancellation (see the alliteration there?) of Legend of the Seeker, although to be fair, that was totally about the pretty and not, y'know, plot or characterisation. And it was at least left mostly tidy so no horrible cliffhangers.
Of older shows, Firefly is an obvious choice but as I watched it long after it was cancelled it doesn't really count. It could have gone amazing places though, curse you evil TV execs. (Although seeing what Joss did for the movie, I'm not as sure of that as I was). I felt so bad for Farscape fans, although I didn't watch the show, simply because being left on that kind of cliffhanger shouldn't happen to any TV fan. Invisible Man (with the ever wonderful Paul-Ben Victor) was a joy (and I haven't even seen the second season of that.)
Nope, the only show I still persistently, insistently want back on my screens is Wonderfalls. That had so much potential and the show runners even had an overall story arc at least up to Season 3 planned. Argh. And yes, ok, the fact that Tracie Thoms was in it influences me a smidge but c'mon, it was fun, clever lil' show with a fantastic cast and it deserved better than to be pulled after 3 episodes. Idiots. *gnashes teeth* I keep hoping one day the actors might have enough clout to persuade someone to have another shot at it but that's a pipe dream. *siiiiighs* Wonderfalls, alas, we barely knew ye.
