I fancied pancakes the other week, so I made a batter without following a recipe because I didn't have one. It worked fine though and the pancakes were very tasty. But I fancied finding a recipe for the thicker american-style pancakes, mostly because the only measuring stuff I own is a set of US standard cups, so recipes that use that are good for mice :) I found the perfect recipe on www.allrecipes.com and I tried them out last night.

I had one with the traditional sugar and lemon and two with chocolate - I just pressed a square of Galaxy chocolate onto each one when they were fresh out of the pan and the residual heat soften it beautiful so it was all melty and tasty :) And the good thing is the batter will make more pancakes than I can eat in a sitting so I had batter for today too. Just scoffed another batch. Lovely!

So far today, I've done some kitchen tidying/cleaning, paid the mortgage, watched the football and spent far too much time poking Facebook. It worries me how addictive that is. Must prise self off!...later....:D

I went shopping last night (pay day! Yay!) and I have suitable snack food for the SuperBowl tomorrow. It's a tradition that I MUST have loaded potato skins and so I have ;) I usually also have pizza but have skipped it this time as I decided to buy other snack food instead. As for who I want to win, well, with all respect to [livejournal.com profile] e_musings, I'm kinda rooting for the Cards. However, I'll be thrilled for her if the Steelers win (which I think they will, to be honest, I think they're the stronger team). Either way, I'm hoping for a great game! I've taken Monday morning off work so I can stay up late to watch the whole thing! Hee :D

This is really easy to remember and seems to be foolproof :)

Original recipe:
  • 1 cup all-purpose flour
  • 1 tablespoon white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 2 tablespoons vegetable oil


I left out the vegetable oil as I didn't fancy it but might try it another time. Worked fine without it, I have to say :) This quantity, btw, is for what the site calls "three servings". And yes, it's in metric, the damn site won't show the US equivalents at the mo, I'll come back and edit later. Edited! See why it's easy to remember in US measurements?

You're the second LJ friend that wants the Cards to win. What's wrong with you people? Surely there is Steeler Nation in England, too! Steelers rock. With a player like Troy, is there really any other team worth anything?

Eh, the Cards are the underdogs, really, and I'm a Brit. Cheering for the underdogs is like a national requirement :) But like I said, if the Steelers win, I'll be pleased for you :)

I always go "bzuh?" when I see measurements in 'cups'. I mean, a teaspoon is a teaspoon, but dammit cups come in like a thousand different sizes! For the cookery illiterate among us... namely, y'know, me... what the hell kinda cup are we talking about, here?

* 125 g all-purpose flour
* 10 g white sugar
* 3 g baking powder
* 2 g baking soda
* 2 g salt
* 235 ml milk
* 1 egg
* 30 ml vegetable oil

This is why I shouldn't be allowed to sleep during the day. On reading that recipe (which, thank you for metricising!!), and gettig as far down as "1 egg", I was literally THIS close to typing "wait... was that 1g egg, or 1ml egg?"

But yes. Thank you!! And this is why I don't cook. ;)

I don't cook either but this recipe is Mitchy-proof, so you should give it a try. And then midnight chocolate pancakes could be yours! :D

Yeah, a cup is a little less than 1/4 liter, so 235 ml I can buy. But how the hell (and why) do you measure dry ingredients by weight instead of volume?

Well I usually weigh stuff but I don't have scales. I have no idea why Americans seem to prefer the cup measurements, I was hoping you could tell me! There are lots of problems with volume measuring, as many things have a different density so 1 cup of one thing might actually be less than 1 cup of another.

Well, cups are easier and cheaper than scales, I guess?

They will give us different volumes for different things--like they will tell you how much to use if you have cake flour versus regular flour, or specify if you are supposed to sift before measuring or whatever.

MMMMMmmmm pancakes... with warm strawberries and whipped cream... Yummies. Now - if you're like me - then when you whip up said big batch of pancakes - you cook them all and then freeze what you can't eat at that sitting - then when the midnight chocolate pancake monster comes stomping in - you just pop it in the microwave. Happiness in moments..
